I have 2 sentences:
a- we saw the young dancer rehearse for the opening night
b- we saw the young dancer rehearsing for the opening night
My answer would be:
a- it means I saw only the part of what was actually happening
b- I saw the whole performance.
Am I right?

I would look at it slightly differently. To my ears, the speaker in the first sentence is looking at the event as a whole; while the speaker in the second sentence is looking at the event as "something happening". But without more context, I wouldn't like to say which speaker had witnessed more of the performance!
