I'm not sure I understand the question. What changes male to female by adding s?

There are many of these "singular to plural to singular by adding one or two s's" words.

One example is:

prince...princes...princess

Now I've got it:
  • What is a word that you can change from male to female and from singular to plural by adding s?

Do you have another?

Here is a list I developed for someone else. It is words that go from singular to plural to singular by adding one or two s's. Some change gender as well.

abbe > abbes > abbess
adventure > adventures > adventuress
bra > bras > brass
care > cares > caress
cosine > cosines > cosiness
deadline > deadlines > deadliness
gamine > gamines > gaminess
glassine > glassines > glassiness
la > las > lass
large > larges > largess
ma > mas > mass
marque > marques > marquess
mi > mis > miss
millionaire > millionaires > millionairess
mora > moras > morass
multimillionaire > multimillionaires > multimillionairess
ogre > ogres > ogress
pa > pas > pass
prince > princes > princess
pro > pros > pross
saltine > saltines > saltiness
sculpture > sculptures > sculpturess
sightline > sightlines > sightliness
squire > squires > squiress
timeline > timelines > timeliness
