Are both these sentences correct:
1-He put the plate away and from here on was all bustle and business.
2-He put the plate away and from here on all was bustle and business.

I would be inclined to say "from then on", rather than "from here on"; but otherwise they're fine.
In #1, "he" is whimsically described as "bustle and business" – i.e. he made a lot of fuss.
In #2, the situation involves "bustle and business" – i.e. there was a lot of fuss.
