Hello,
I'd like to know if one can say "On last Monday" or "Last Monday".

Can I say "On the last sixth of May"

or

"Last May the sixth"?

Last Monday is correct, as is last May the sixth.

Alternatives would be "On Monday of last week" (although this is very formal usage) and "last year on May 6th."
