A: "Do you want to play poker?"
B: "No,__________________.
In the blank, how many types of responses are possible?
(a) No, I do not(or don't) want to play poker.
(b) No, I do not( or don't) want to play it.
(c) No, I do not( or don't) want to do it.
(d) No, I do not( or don't) want to.
(e) No.
I think those above are correct and possible answers in the blank.
But how about "No, I don't want to do."? I can't understand why this is not be used instead of "No, I don't want to do it.".
Could you please give me any grammatical answers about it?

OK. And allow me to suggest a correction: there should be just the one "No", not two.
Choices (a), (d), and (e) are possible answer. (b) and (c) are not. The rule for ellipsis is, never substitute, and that's what's going on here:A: "Do you want to play poker?"
B: "No,__________________.
