I'd like somebody to enlighten me:
This is the first time I have eaten snails. - I know that we use the Present Perfect Simple tense in such patterns. But what happens if I write something like this:
This will be the first time I...
a) will have eaten snails.
or
b) have eaten snails.
or maybe something else.
Please help me.

It's wrong to say "This will be the first time I will have eat snails," isn't it?
In standard English, you're right, Daruma: you would need the past participle ("have eaten").
But in some non-standard dialects, no doubt, "eat" might be used.

It's a bit wordy, but not incorrect. You are referring to a situation in the future - perhaps you have seen the menu for a dinner party next week. It will be the first time you will have eaten snails.
