Default about the usage of the word "much"

In "Scientists point out that the acupuncture points have many more nerve endings than other places on the skin", why do we use "many" but not "much" before "more"?

Usually, you use "many" with a countable noun, and "much" with a non-countable noun, e.g.

1. There are many more grammarians here than I expected.
— "grammarians" are countable.

2. There is much more food here than I can eat.
— "food" is non-countable.
