I am confused at some multiple choices. Please explain them to me.
1. They will have it finished in__________.
a. three quarters of an hour b. thre quarters of an hour's time
2. ________ of the two books holds the opinion that the danger of
nuclear war is increasing.

==> b. is the correct choice.
a. They will have it finished in an hour. :( (specific = an = one)
b. They will have it finished in time. :D (non-specific = time)
2. ________ of the two books holds the opinion that the danger of
nuclear war is increasing.
a. Either b. Neither
==> b. is the correct choice.
a. Either of the two books. :( ('either...or' is a set pair)
b. Neither of the two books. :D ('neither' can stand alone)

With the first, I can't see what is wrong with the first answer. Maybe it's a British English thing, but both sound fine. I agree about the second answer.

I agree. In the first one, a and b are the same (although a would be used more often. I also agree about the second answer (and would have said the same thing).
