what's the meaning of "established" and " hitting on" in the below context? thanks !

The phrase "we've established" there means that it has been determined for certain. They now know for sure who is staying with Monica.

When Monica accuses Joey of "hitting on" Rachel she means that Joey is making an approach to Rachel with sexual intent.
