Do we say 'what's your opinion on something' or 'what's your opinion of something'

On is the correct preposition :

e.g.
What is your opinion on this topic?

My opinion on this topic is.....

As Teia already said "On" is correct.

I would agree that opinion on is the best - but there is nothing wrong with opinion of, especially when talking about a person.
