Default Bilingual skills / bilingual skill

Hi,

is "bilingual skills" always used in the plural?

I am assuming "skills" here may refer to multiple
activities such as reading, writing, speaking, translating.
Is this assumption correct?

Is it correct to say "bilingual skill"? (not plural)

Please see the following sentence:
"Bilingual skills are a plus, as are special areas of knowledge or fields of expertise."

Would it be correct/better to say -
"Bilingual skill is a plus, as are special areas of knowledge or fields of expertise."

Thanks

Say bilingual skills. The first sentence is correct.

I'd use the plural, or you could say 'being bilingual is a plus'.
