It's very simple. I'll tell only some basic things.
After such you must have a noun:
Jose is such a nice boy!
They are such nice children!
After so we usually have only adjectives:
Jose is so nice!
Your children are so obedient!
It's also possible to say this way:
Jose is so nice a boy!
