Yep. The hotel staff were polite.

staffs=staves=plural of staff/stave

staff/stave=1) pole, strong stick
2) the five lines that music is written on (in AmE use staff, in BrE use stave)

Staff is a collective noun. In BrE it may be usually used in the plural, but in AmE it can be singular or plural.

The hotel staff was very polite.
The hotel staff were very polite.

We can also pluralize "staff".

John has his staff and I have mine. Both of our staffs will be working on the project.
