Default the long game of art

2.Why is "game" and "art" used together? Is "the long game of art" a fixed phrase?
(contex: This posthumous collection of his writings and interviews provides a valuable opportunity to re-examine his talent for observing the long game of art. )

No, but "the long game" is an expression. It can refer to something that is followed over a long period of time.

Then what does "long game of art" mean here? Does it refer to "the art which exists forever"?

It sounds as if he had been a collector. Evidently the writer was impressed with the works he collected. Perhaps many of them increased in value dramatically over a long time.
