please can someone give me some ideas for teaching adult beginners without doing too much grammar/making it boring. they just want vocbulary for holidays etc
Lots of pictures, flash cards and lots of role playing...this is more active and engaged.
Also, music. Get seasonal music and lyrics...do exercises with listening as well and have them fill in the blank. The music is easier to do because you can control it more easily. You can even have them sing along--that will help develop the muscles that are involved in the target language.
Go shopping to the store and commit to engaging only the target language. Teach them some basic questions that they can use to ask you what something is called and then reply with: Oh, this is a tomato. and these are tomatoes. The will learn more rapidly what makes a plural and what is a singular.
Sing alongs, even if they are kids songs are often fun to non-native speakers because children's songs can be harnessed more easily.
Good luck,
Paco
