piece of paper/sheet of paper

What is the difference between these two: piece of paper & sheet of paper???

Not much with a standard size page, but the bigger it is, the more likely I would be to use 'sheet':
I bought a sheet of wrapping paper.
If it is smaller than A4, I would tend to use piece.
