They are all correct (except you need to add in "is" - What day is it today?), since they are asking different questions. In one form the question relates to the day of the week; in the other it relates to the date in the month.

You sentence will look better as: "I can be there on the 1st November. I am free on that date."

What is today's date? -- November 30th
What day is today? -- Thursday

Either. 11/1 is a date but it is also a specific day of the week (in a given year).

I can be there on the 11th of January...

To my mind 11/1 could be that but equally it could be the 1st of November (9/11 springs to mind)

There are some things that should be left alone.
