Default had seen it all...

Hello,

I'll never forget the sight of him hopping around and dancing and spinning their wheelchairs around while I was singing. He had an insanely blissful look on his face and the people at the nursing home were obviously enjoying themselves completely. Up until then they may have thought they had seen it all.

What does the bold sentence mean? help...

Thought I/he/they had seen it all means that what was just seen was unusual and surprising. Had one thought one had seen everything already, one would have been wrong.
