Default About usage of "remit"..

"Please remit your payment in an enclosed envelope"

In this sentence, if I put "pay" instead of "remit", does it sound odd?

Yes. "Pay" a payment" is odd.

It should also say "the enclosed envelope", unless there is more than one.
