Default A question on gerund

I read the definition on gerund. But in what way does a gerund only function as a verb?

By definition, "gerunds" function as nouns, not as verbs. They take an action and turn it into a thing that can be talked about.

Swimming is fun.
I enjoy caring for her.
We learned about cooking Spanish food.
