Please explain to me why there is a "S" at the end of "ECONOMICS".

Good eye! You're right. There isn't supposed to be an '-s' on "economic proserity", as Ronbee nicely pointed out:

It was probably supposed to be economic prosperity,

Moreover, tdol, too, points out that the noun economic takes an '-s' (e.g. economics) whereas the adjective does not (e.g. economic prosperity).

economics prosperity is incorrect, as Mike adds.
