what is the differece in meaning bitween: for examble,
the plane wing and the wing of the plane.
I mean how does the meaning change when I interchange or swap the adjective and the noun?

There really isn't any difference. We don't usually form 's possessives with inanimate objects, unless we are referring to a specific object. We form a sort of compund noun instead, with the first noun acting as an adjective.
a tree limb
a limb of a tree
a car door
a door of a car
