I have this question to ask you. What would I say for a king, who is interested in the area of science and his people want to give him a proper name to honour him in the capacity of being the king but he still plays active role or supports various activities in the field of science? (Is it the Scientist King )
The same question but for a king who is interested in the area of development and his people want to give him a proper name to honour him in the capacity of being the king but he still plays active role or supports various activities in the field of development? (Is it the Developer King or The King who is a Developer)
Again for a princess who is a lawyer, can we say Lawyer Princess? Or what else can we say?

So do I - and there's a precedent for that sort of construction, Piak. Someone - I forget who, but Google would know - was called 'the Philosopher King'. And King George III - known popularly as 'Farmer George' - has sometimes been more formally known as 'the Farmer King'.

Hence, the meaning of the Philosopher King would then be translated as the King of philosopher, to my point of view. Could you or someone else please help explain it so that I will use as a reference? It seems to be simple but it is quite confusing. Please help!

If the King is not a scientist (but shows an avid interest) he may feel he is being falsely labelled. Maybe the Discovery King would be more appropriate.

Not to me; it would be 'the king who was a philosopher'. The King of Philosophy would be the person who was undoubtedly the greatest philosopher, but not necessarily a real king.

I can add another example to that of the Farmer King: in Cambodian mythology, and very probably actual history, there was a king who suffered from Hansen's disease (leprosy) and he is translated into English as the 'Leper King'- the king with leprosy, not the king of leprosy (the greatest leper).

A king who is a developer => the developer king
A princess who is a lawyer => the lawyer princess
A king who was a farmer => the farmer king
A king who was a philosopher => the philosopher king

The best/top philosopher in the world => the king/queen of Philosophy
The best/top lawyer in the world => the king/queen of Law

I think, I have to accept the last suggestion of Casiopea by comparing to the Philosopher King as mentioned by BobK, such phrase can be seen in Google, and Leper King as mentioned by Tdol.
