Could I say "week by week" to express one week after one week?

I would say the date, I think. Or about two weeks... ;)

That depends on what you mean.

"Week by week" means a continuum of weeks, one week at a time.

We will examine the data week by week.

"Week after week" means for a long time.

I hear that same complaint week after week.

"Next week" means the week after this one.

I'll meet with him next week.

It's a perfect explanation indeed, I think I'll stay here also week by week, or in other words: a very long time! ;)
