I'd like to know if I can rewrite the part of " say so" in #1 to #2~5.
#1 An honest man would not say so.
#2 An honest man would not say such a thing.
#3 An honest man would not say that.
#4 An honest man would not say like that.
#5 An honest man would not say such a way.
I'd be happy to know if they are correct.

I am not sure I understand your question. However, #4 should be "An honest man would not say it like that" and #5 should be "An honest man would not say such a way."

The meaning you want from 1 is rather old fashioned. It is more likely to mean 'would not agree to that'.

# 2 and #3 are fine. In #1, "so" refers back to another statement.
A: John said he changes invoices because it is the right thig to do.
B: An honest man would not say so.
#4 and #5 are incorrect.

That doesn't work for me. There needs to be an object after "say".
An honest man would not say xxxx in such a way. (insert that or something else)
