Could it not be a way of emphasising that 'we must eat' ?  The 'do' is usually stressed, if you get what I mean. Sure one can't say that? Usually, yes. But suppose you were waiting with a friend for another friend, waiting to go somewhere all together; after a while, you say - OK, we've been waiting for half an hour. Let's we go now, and Harry can catch us up when he gets here.
Not usual, but possible.

For example Let's you and I go, Jo. Sorry Babs, someone has to stay here - we'll phone when it's OK for you to join us.
