When talking about dinner, do I say 'we're going to make the reservation tomorow' or 'We're going to make the reservations tomorrow' or 'we're going to reserve tomorrow

1 & 3 sound fine to me.

2 sounds weird to me unless you are going to have dinner at several places tomorrow. I don't see any reason you have to make several reservations for one dinner.

I'd say either 'we're going to make a reservation for tomorrow' or 'we're going to reserve for tomorrow'. In the first case you could also use 'the', but only if the person listening knows which reservation you're talking about:
A: Have you reserved for tomorrow night?
B: Not yet, but I'm going to make the reservation on my way home from work this evening.

Your second version is OK only if
1: your listener knows that you are going to make reservations
2: you're not going to make them until tomorrow (for some unspecified future time)

If we're going out on Saturday and we're going to reserve on Friday- Is it correct to say 'We'll make the reservation on Friday'?

It is a dinner reservation for a few people.
