Default Indefinite Pronouns Followed by Adjectives

I teach ESL. One of my students pointed out an instance where an adjective followed a noun in English, which violated the rule he was taught.

Does anyone know the grammar rule that explains why adjectives can follow non-specific indefinite pronouns?

    ex:
"I met someone nice at the party."
"Does you meet anyone nice at the party>"

Are these not simply examples of reduced relative clauses?

I met someone who was nice at the party.
