And if I say "the car was launched into motion" instead of started moving? Would it be correct?
When I least expected it, the roller coaster car was launched into motion.

I don't think I'd use "launched". If you are trying to describe a sudden, unexpected movement, you might try:
lurched forward
lurched ahead
jerked into motion
