Vain people often lie about their ages so people will think they are younger than they really are. This is the source of this (old) joke. The woman is over thirty, yet lies about her age. Presumably, when she reached her mid-thirties she started subtracting a year from her age at each birthday. She was approaching thirty from the wrong direction.
