can you refer to people as "humans" like in "how often do humans make fine decisions for themselves?" is it ok to say that?
some of my students say that they are working on a record label (they want to build a music band). is it correct to say "record label", or what's the authentic word for it?

Usually it refers to the trademark or brand of the producing company, so if they are planning to produce their own recordings, then yes, it is correct. See >> Record company information
