    Default singular vs plural

    Student may pick three books from a list of fifty as their outside reading material.
    I wonder whether I could just say outside readings material instead.

    maybe you can use "outside reading materials"

    It depends in your sentences.

    Maybe you could use "outside reading materials" because it's "three books"
    3=plural... it's just my opinion

    The Standard is non-count material, but some speakers these days are using it as a count noun, materials. Given your context, though, I'd use non-count.
