what does it mean?it's Steve Job's quote,my favorite,but I can't figure out what it really means

by the way,I have one more problem to be solved

"we sometimes forget that for every mile of land there is/are four miles of water" (the answer here is "there are",would you mind explaining it to me?why "there are" ?)

Stay hungry, stay foolish would make a bit more sense to me- if you are hungry, you are always looking for something better- never satisfied.

"four miles" is plural and is the subject of "there are".

And the 'foolish' part reflects Steve Jobs's attitude to creativity - don't dismiss ideas just because they don't fit in with received wisdom. And the 'stay' part means don't lose that childish ability to adopt outlandish ideas.
