I don't understand this kind of joke in general either.
I don't find it funny or is it that I don't just get it?
Both require you to "hear" the reply. And both are an imitation of sounds in words, and very nearly onomatopoeic. So "boo-hoo" sounds to us in English like someone crying. And "a little old lady who" sounds to us like a yodel call.
Use dictionary.com for help in the word classification that I have used.

Well, look what the wind just blew in!
Blouen, knock-knock jokes in my opinion are the lowest form of juvenile humor! The 'humor' lies in the degree of interaction between the 'knock-knocker' and the responder! Rather than hurt a child's feelings, most adults will go along with the effort to be funny!

A Day Off
So you want a day off.
Let's take a look at what you are asking for.
There are 365 days per year available for work.
There are 52 weeks per year in which you already have 2 days off per week, leaving 261 days available for work. Since you spend 16 hours each day away fron work, you have used up 170 days, leaving only 91 days available.
You spend 30 minutes each day on coffee break which counts for 23 days each year, leaving only 68 days available. With a 1 hour lunch each day, you used up another 46 days, leaving only 22 days available for work.

Fishermen on the lake
Two fishermen were out on the lake when one of them dropped his wallet. As they watched the wallet float down to the depths of the lake, a carp came along and snatched up the wallet. Soon came another carp who stole it away and then a third joined in. Remarked one of the fisherman, "That's the first time I've ever seen carp-to-carp walleting."
