Default exclamation sentences

I wonder if the following sentence is correct: "How beautiful [day] it is today!".

Also, I'd like to know whether the word order of "What a beautiful day it is." is correct... It shouldn't be "What a beautiful day is it!, should it?

Could you correct my English, please? Even if I write grammatically correct, you can correct me stylistically. (I hope you understand what I mean )

We use "How" with adjectives and "what" with nouns.
So you can say: How beautiful! But "What a beautiful day it is!".

Well, that means that it must be correct... When I say just "How beautiful it is!", the word "how" (what part of speech is it, by the way? an adverb?) refers to the adjective beautiful, not a noun....

In the context of your dialogue, I don't see anything wrong with the second speaker's utterance. It follows and it's clear what the speaker means, so I think it's OK. Speaking is much more about meaning that ensuring that we follow on from the previous speaker perfectly grammatically and logically. Something like 'And it's another beautiful day today' would be more likely, but what you put would follow without any confusion IMO.
