Well, that means that it must be correct... When I say just "How beautiful it is!", the word "
how" (what part of speech is it, by the way? an adverb?) refers to the adjective beautiful, not a noun....
Let's imagine this situation:
1st Speaker: "It was a very beautiful day, yesterday!"
2nd Speaker: "Oh, and how beautiful it is today!"
This "conversation" may sound funny and a little artificial, I know

. But I've thought it out just for the purpose of showing you the possible context of the sentence "How beautiful it is today!"
I am just not too sure whether the adjective can be included into the sentence without the word "one" which would replace the noun "day", actually. If the adjective can't work without its noun, then, "how" can never be used in such sentences, can it?
