Which is correct? please i need an explanation

One of my coworker is a grammar expert

Or

One of my coworkers is a grammar expert

In the partitive structure as "one of + plural nouns", the verb agrees with "one" and not the plural nouns after the particle "of".
(Not a teacher.)

I need further explanation about this, coworker or coworkers, i think it has nothing to do with verb subject agreement, please help me

Think of it this way,

Ex: I have many coworkers and one coworker is a grammar expert.

Ex: I have many coworkers and one coworker in that group / one of my coworkers /one of them is a grammar expert.

It's very simple and evident when you reduce the object to a pronoun.

One of my coworkers is an expert on grammar.(I don't know that there is such a thing as a "grammar expert").

The sentence can be reduced to:

"One of them is an expert." (them, plural. Hence, "coworkers")

When we say "one of..." it is always followed by a plural object, otherwise, we couldn't say "one of", now could we?

Wrong: it is a matter of subject - verb agreement .
One is the subject of your sentence.
Of coworkers is an attribute.

One + verb in the singular:

One ........is a grammar expert.
