Everyday is an adjective:
Getting up very early and geting back home very late, that's my everyday life.
Every day is an adverbial:
Well, I tried to relax every day, Doctor.
;-)

Additionally, here's a quick way to remember the two:
My everyday life is every (single) day.
Everyday before a noun
Every (single) day

Is the hyphenation just a typo or can it be used? And which exactly should it be here?
Every (single) day activities?
or
Everyday activities?
I would say the second one.
I thought I knew the difference well till I met this!

As far as I know, it's okay to put a hyphen within every-day (everyday is just a compound, whereas every-day is a hyphenated compound, that's the difference :-) ).
