Your confusion is understandable. Nutrients is obviously a countable noun, as it is in the plural. The reason for amounts here is that the level/amount of each nutrient is important. "Number(s)" of nutrients would refer to counting the nutrients, rather than measuring them.No.3

The number of nutrients would be three. The amounts of nutrients would be the individual values.
