It refers to all literature, but makes it concrete by saying pages. So it just means 'Many cats are mentioned/dealt with in literary works...'. It wouldn't be wrong just to say 'Literature contains...', but the reference to "pages" makes the transition from abstract (literature) to concrete (actual references to cats) smoother.
