It's about the way you pronounce ape [eip] and apricot ['eiprikot]; a cot is a kind of bed which you put babies in. It's sort of a pun, a play on words - an aprocot as a single word is a fruit, whereas in the joke it is a bed for baby apes.

A cot is a small bed

Apricot, a fruit, can be pronounced ape-ri-cot

This type of joke is a play on words...actually I would can this type of joke a "groaner" because instead of laughing you moan "ohhhhnnnnnn"
