I only met Rachel once, but she came across as very nice.
I ... she struck me as very nice.
I ... she impressed me as very nice.
Do all the above wordings sound right and convey the same concept? Thanks.

The first does, the second doesn't work for me; I wouldn't qualify impressed like that.
