Default plural forms...

What is the plural forms of the ff:
1. jewelry
2. equipment
3. machinery
4. furniture
5. input
6. output
7. document
8. evidence

I'd use 'documents' and the rest I'd use uncountably, though I might say 'inputs\outputs'. .
