Temperatures hit 40 degrees centigrade yesterday.

Could you tell me if we can leave out the "the" before "temperatures" in the first sentences. I've seen many more sentences beginning with "Temperatures", without the article "the".

Yes, you can omit the word the in those sentences.

Tomorrow, the temperatures in this area will be around thirty degrees.
Tomorrow, temperatures in this area will be around thirty degrees.

Both are equally correct.
