what is the difference between error and mistake and when we use this not that?

Error is the general term and denotes that which is strictly opposed to truth.
Mistake implies misunderstanding, inadvertence.

e.g.

She made a great error when stating that Columbus lived in the 10th century.
They were advised to be attentive, so as not to make mistakes in their papers.
