"I saw Mary in my dream" is better, but it would have to be clear that you were sleeping. There's another kind of "dream" when you're awake.

"One" is very formal or literary.
There's nothing wrong with "in one's sleep" but I don't think it's very useful. I had a hard time thinking of an example:
"It's possible to have a heart attack in one's sleep."
I grabbed all the blanket in my sleep.
He talks in his sleep.
