Dear Teachers,

The other day one student came up with the word expression high volunes of people. Her sentence was, that day there high volumes of people. To be honest, I have never heard that expression before.
She was sopposed to be writing a formal summary to her boss.

"high volumes of people" is fine as an expression. Whether it is suitable in the context of your student's summary I can't say without more context. Other similar collocations would be -

low volumes of people
large volumes of people
small volumes of people

etc.
