With two coworkers out sick today, Evan really had his work cut out for him.



For a start, is "out" in the above optional?
Second, could I say "With two coworkers off sick today" instead? Thanks.

out sick indicates that the people were not at work so I think you need it to convey this meaning.

"Off sick" would be a valid alternative.
