Default prepositions of location: to/in

Hello,

India is to the south of China.
Beijing is in the east of China.

Why "to", why "in"?

Beijing is in eastern China.

"In" is used here since Beijing is within the borders of China.

India is to the south of China.

"to" is used here since you are showing a direction from China
