It all depends whether you're thinking in a general or specific sense, T.
GENERAL
1. Today most everything/most things seems more expensive than usual.
2. Today almost everything seems more expensive than usual.
In number 1, 'most' describes a range somewhere from, say 60 to 90% while in number 2, 'almost' describes, say roughly, 90 to 99%.
100% everything
90 - 99% almost everything
51-90% most everything
Obviously, these percentages are not cast in stone. They are only there to give you an idea of the relative values of the words.
When we are thinking of specific things, then we use 'the'.
Most of the things you buy for the household are ...
Almost all the things that we need in the household are ...
