Default Possessive pronoun

What possessive pronoun should be used with such nouns as participant, member, shareholder, etc. when gender is not known (in contracts, statutes, etc.)? I met in documents his/her, their or its.

It depends on the firm.

He, She, and It would not be used. His/Her, varying with, Her/His, as well as Their tend to be used a great deal by some firms.

Other choices include,

said member's, said participant's, etc.
the member's, the participant's, etc.
each member's, each participant's, etc.
